Tamarind is one of the primary "sour" flavorings in many Southeast Asian cuisines. It is the fruit of the leguminous tamarind tree. While tamarind pods are available in many markets, the most readily available forms are blocks of tamarind paste and containers of tamarind concentrate. Because the blocks contain seeds, chunks are usually cut off and soaked in warm water.
