The Guajillo is grown mainly in northern and central Mexico. With a mild to moderate heat, it is one of the most common chiles grown in Mexico - they possess a heat level of "4" to "5". Guajillos are shiny, deep orange-red with brown tones, elongated, tapering to a point and sometimes slightly curved. They measure about 4 to 6 inches long and 1 to 1-1/2 inches across. One of Mexico's big three, Guajillos are thin fleshed, and they have a green tea and green wood flavor along with berry tones, tannins and a sweet finish.
